Red Velvet Cake

Red Velvet Cake is a rich, moist, smooth, chocolatey mix that is deep red in colour.

Ingredients
500g red velvet cake mix
135mls water
2 eggs
75ml vegetable oil

Method
Pre-heat oven at 180 degrees
Place all ingredients in a mixing bowl
Mix on low speed for 1 minute
Scrape down sides
Mix on medium speed for 2 mins
Scrape down sides
Place in pre-greased cake tin and bake for approximately 30-40 minutes or until cooked through

Notes: This recipe is also suitable for bar cakes, round cakes and cupcakes.

Scones

Ingredients
500gms scone mix
250 mls water
Makes approximately 12 scones.

Method
1. Mix with knife and roll out to desired thickness.
2. Allow to rest for 5mins.
3. Cut into scone size shapes and place on baking tray.Allow to rest for a further 5 mins
4. Place in oven at 220 degrees for 15mins

Scone Mix

Donuts

Ingredients
1 kg donut mix
550 mls water

Method
1. Blend mix & cold water together for one minute on speed 1.
2. Mix on second speed for one minute.
3.Rest for ten minutes.
4. Then fry at 190 cel.
This mix contains all the necessary ingredients, only water needs to be added to the mix.Simply blend to a smooth texture and its ready for use. Ideal for Cinnamon and Iced Donuts including iced with decorations on top.

Cake Mixes

Donut Mix

Sponge Cake

Ingredients
340g Sponge cake mix
½ Cup Water
2 Eggs

Method
1. Pre-heat oven at 180 degrees
2. Place water, eggs and Sponge Mix in a bowl (in that order)
3. Blend on low speed
4. Whip on top speed for 6 – 10 minutes (mixing for 10 minutes results in a lighter texture. For Swiss Roll, mix for only 6 minutes)
5. Bake for 15-20 minutes

Cheesecake

500g Cheesecake mix
400mls Water

Method

Blend on top speed for 4 minutes until smooth
Pour onto biscuit base (see Biscuit Base recipe)
Use 22cm pie plate or spring-form pan
Refrigerate until set

Grated lemon or orange rind can be added for variety.

Muffins

500g Muffin mix
200mls Water

Method
1. In a bowl add Muffin Mix and water, Mix for 1 minute on speed 1
2. Scrapping the sides as you mix, Mix for 2 minutes on speed 2.
3. Blend in fruit or other additives and deposit into muffin cups.
4. Bake at 190 – 200 cel. For approximately 25 minutes.
